Recently our local shop ran a trios team tourney, with team drafts for the top 4 and again for the top 2. I loved the team event and want more. To make it more accessible I'd like to run duos instead of trios. Is there a two-player team draft format? If so, how are they seated for an eight-man?

There is no formally used 2-player team draft format, other than 2HG draft.

That being said, 2HG draft is a lot of fun, and your players may well enjoy it. Check out the MTR and the 2HG FAQ for details on how to run these.

A 2-player team format would suffer from a lot of draws.

Good point. I'll be running them Casual Non-Rated, so I can do something special. Perhaps take total wins vs. total losses for all games played that round to reduce ties?

So one team goes 2-0 and 1-2, then they win with three game wins to the other team's two. Of course, going 2-0 and 0-2 still means a draw…

2HG is the only rated two-person team draft format.

If the draft is 4-team, you could let each team play 3 rounds - once
against each other team - and have players score individual match points.
Then, you can just add the individual match points to get the overall team
standings. Players play 3 rounds instead of 2 rounds this way, but my guess
is they don't care.

Seat team members opposite and let them draft their own decks - or use 2HG
draft procedure and have them figure out two decks from the total pool
afterwards.

Round 1
Team 1 player A (1A) vs Team 2 player A (2A)
1B vs 2B
3A vs 4A
3B vs 4B

Round 2
1A vs 3A
1B vs 3B
2A vs 4A
2B vs 4B

Round 3
1A vs 4A
1B vs 4B
2A vs 3A
2B vs 3B
