When you have exactly 8 players for a GPT you're supposed to cut directly to the top 8 and run single elimination. I can't find a way to change WER to run single elimination though. Can anyone help out or is this just not a thing that exists yet?

There is a setting for single elimination. Before you begin the event, you can click the “Edit” button on the event tab to edit the event's information. Then change “Swiss” to “Single-elimination”, as pictured here:

If WER doesn't let you change it because it's a GPT that's already sanctioned, you can just run the event as swiss and drop the losers every round.

After you announce that this is a single eliminate due to we have pnly 8
players then you can just pairing and drop player who lose that round. The
do this again until 3rd round.

One more thing to consider, which I personally only very recently experienced, is that the DCI system will only accept tournaments with a minimum of three rounds. So, if your top 2 (or top 4 or even all eight) players choose to apply the DCI policy to prize split and drop from the event to allow a single player to “win” and get the bye, the event will be automatically invalidated. In my case, to meet the needs of both the system function and the rules as written, the results, if any, will have to be manually reported and the bye assigned by Wizards manually and the event invalidated. As far as I know, there is no policy regarding this anywhere and each such situation is handled case-by-case.

The other possible thing to do is to run the event on paper and e-mail it to your WPN rep. This works just fine, and it's not like you need the complication of WER for a 3 round, 8 person event.
