The main reason to not do a timed draft is that the staff can focus purely to looking out for peeking, mistakes, and draft procedure violations instead of having a judge focused on a stopwatch. Given than mistakes are extremely hard to undo in a draft as the core of the exercice involve hidden information, you want to give your team the best chance to prevent them or at least catch and solve them before they escalate.
Timed draft are done in large events where 1) we usually have enough members in the team that we can more safely devote one to call the draft (loosing 1/16th of your team has less impact than 1/3rd) 2) it's important to keep all tables at the same pace to avoid players from some pods waiting for the others to complete their draft (the same reason we time rounds, basically).

Now, if all players at a local event really, really want to have their draft timed, and you also want to train yourself? Sure, after all, they are the customers, and making them happy is what we do.
