It may not be clear to all as to why these two interactions are different.

The thing to note is that the P/T setting ability in the Eldrazi Mimic trigger is a continuous effect created during its resolution and per 608.2g and 611.2d, the determination of P/T to use is made from the current game state as the trigger is resolving, which would be after all effects have been applied in the layers. It locks in with that value.

Phyrexian Ingester, on the other hand, has a static ability that generates its P/T buff and its bonus is determined at the exact point in the layers when the continuous effect is applied per 611.3a. It kind of locks in the value until the next application of continuous effects in the determination of the next game state, but it isn't fully locked in because it does a new determination after each change in game state.
