Academy Rector dies while Humility is in play. Will the academy rector’s trigger occur?

No, it will not. Academy Rector had no abilities at the time it left the battlefield for the graveyard; its normal leaves-the-battlefield zone-change ability doesn't trigger, because it didn't exist at the time it would have needed to exist in order to trigger.

It's been a while since it's been mentioned here, so I should probably remind everyone that most rules questions don't need the kind of (O)fficial answers that this forum is set up to provide. From the #mtgrules chat room to Cranial Insertion to the Ask A Magic Judge Tumblr to the dedicated Rules Q&A areas on basically any site or service where Magic players congregate in significant numbers, the internet has many, many places to find answers to rules questions. Many of them have multiple knowledgeable judges and players hanging around at any and all hours of the day to answer whatever questions might pop up, so the turnaround time tends to be significantly faster than here, where very few people are authorized to answer at all, and the more open format means if you still have further questions or require additional clarification, you can ask directly right away, instead of requiring a new thread.

JudgeApps Rules Q&A, with its auto-locking threads and mailing-list-style notifications sent out to large numbers of judges, is at its best when it's covering topics that are likely to be relevant to many judges and their events, especially those involving commonly-seen cards that nevertheless interact in relatively obscure, unintuitive, or downright weird ways that those judges might not be aware of.

As such, if you're asking simply to receive a quick answer, or asking solely for your own edification rather than to clarify for the broader judge community, I would recommend checking elsewhere first. The answers you receive will usually be just as correct and informative as those you'd receive here, and you won't be sending email notifications to a lot of other judges.
