Copy effect modifications

Do abilities added via a copy effect affect the text characteristic of the resulting object or only the ability characteristic?

eg. imagine I have this theoretical card Nemesis Morph.

Nemesis Morph
2UBR
Creature - Shapeshifter
You may have Nemesis Morph enter the battlefield as a copy of any creature on the battlefield, except that it has “Protection from green and from white.”

could I use Trait Doctoring or similar text changing effects to change the colours of the added ability?

706.9a indicates that the change affects the copiable values, but does not say if it affects the text characteristic specifically.

Ok, let's use a similar real example

how about the type added by Master Biomancer?
Can Artificial Evolution change the Mutant type?

Does a change to the copiable values constitute a change to the object's text?

As a general rule, questions on theoretical cards will not be answered here (because a huge amount of time, the answer is “If Wizards wants to print this card, they're likely to mess with that section of the rules first”).
