If I cast Emblazoned Golem while I control Chief Engineer, giving it convoke, what value can I choose for X?

Since I'm not actually paying X, I don't think the “spend only colored mana, etc.” restriction applies, so can I choose any value for X if I pay all of X through tapping creatures?

Yep, this work. Any mana you spend on the Golem's kicker must be different colors. But that restriction only applies if you are actually spending mana to pay for it. It doesn't apply if you're paying it by tapping creatures for convoke. If you wanted to, you can announce the Golem with Kicker = 5, then tap a total of seven creatures to pay for the Golem via convoke.
