Defending Players and Planeswalkers in 2HG

In 2HG, does rule 810.7b (the rule that describes how the term “defending player” works) apply even if I'm attacking a planeswalker? That is, if I attack my right-head opponent's Jace Beleren, can I declare that the left-head opponent is the “defending player” for purposes of a one-shot effect such as the trigger from a Hellrider?

Yes, 810.7b still applies when attacking a planeswalker, so you can have your Hellrider deal damage to either head. (If this seems weird, remember that creatures controlled by either head can block–why shouldn't both heads be defending players?)
